Almond Ginger Slice
Ingredients
2 cups plain flour
1 cup caster sugar
125 gm crystallized ginger
200 gm salted butter
1 egg
30 gm blanched almonds
Method
1. Sift flour, add sugar and chopped ginger.
2. Mix in melted butter and egg.
3. Press mixture into slice tray.
4. Draw small squares on surface and place a blanched almond in each square.
5. Bake in a moderate oven until golden brown, about 20 minutes, recut squares.
6. Cool in tin, then cut into small squares.
Ginger Slice
Base – ingredients
125 gm salted butter
70 gm white sugar
1 teaspoon ground ginger
1 cup SR flour
Base – method
1. Melt butter in saucepan.
2. Pour melted butter over sugar.
3. Mix in sifted flour and ginger.
4. Spread mixture over a slice tray.
4. Bake until light brown, moderate oven, about 10 minutes.
Topping – ingredients
70 gm butter
1 teaspoon ground ginger
2 dessertspoons Golden Syrup
1 cup pure icing sugar, sifted
Topping – method
1. Put all ingredients into a saucepan.
2. Heat gently adding more icing sugar as necessary to form a velvety icing.
3. Pour mixture over base while still warm and spreads over the whole base.
